in natural casing tied by hand. It is recognized by the characteristic
coarse dough by the beautiful red color and the right balance between
lean parts and fat parts. By its incomparable fragrance and its taste,
intense but not aggressive, and its smoothness. The long maturation is
aged in old natural cellars. |

It is certainly the most valuable pieces, recognizable
by the large diameter due to sacking in double casing coupled natural
and sewing. This feature allows a much longer maturing, still aged in
natural cellars, which can reach even the twenty-four months. Truly unique
fragrance, flavouring, but especially the softness despite the long aging.
The Sewing is the ultimate expression of the tradition of the Noble Brignano
Salami. |

Due to their small size, are and were the first to mature
and to be consumed. Same mix and same noble characteristics of the larger
salami, for a smell and taste always unique and unmistakable. |
