Retrieved on two floors after a careful and patient conservative
restructuring, has salt processing, cell drying and first curing, all
supported by technologically advanced facilities and monitored 24 hours
a day by dedicated software for all stages of production.
In our laboratory, a standard is rigorously applied system of self HCCP,
to continue what we like to define a “modern artisan tradition”.
