The cellar
Dating back to the early '800, retains its original stone
and brick and is inserted under the fortress of the town and Brignano’s
Castle.
Always used for our family salami, has the peculiarity of maintaining
a temperature and humidity almost constant throughout the year.
Here, the Noble Brignano’s Salami become mature slowly developing
its characteristic hints and the unmistakable fragrance, maintaining the
right softness even after long aging of up to 24 months.
Our cellar is always open to visitors
